Pine Nut and Apricot Rice

Ingredients

  • 2 tbls 
    Regular Margerine
  • 1/4 cup 
    Pine Nuts
  • 1 cup 
    White rice, long-grain
  • 14 1/2 oz 
    Canned Chicken Broth
  • 1/2 cup 
    Apricots, dried, uncooked
  • 1/2 cup 
    Onions

Directions

1. Melt the margarine in a medium skillet over medium-high heat.

2. Add the pine nuts. Cook and stir for 3 minutes, or until lightly browned.

3. Remove the pine nuts from the skillet with a slotted spoon. Set aside. Add rice to the skillet.

4. Cook and stir for 5 minutes or until rice is golden brown, stirring frequently. Stir in the broth and bring to a boil.

5. Reduce the heat. Cover and simmer for 20 minutes, or until rice is tender and liquid is absorbed.

6. Add the reserved nuts, apricots, and green onions. Cook, covered over low heat for 5 minutes. Let cool and serve.
